Peaches with Broiled Meringue recipe
This takes simple peaches to a whole new level. The sweet and crisp meringue add texture and sweetness to the perfectly ripe peaches. Try serving alongside pound cake or simply on their own. Serves 4.
Ingredients:
- 2 ripe peaches, halved and pitted
- 1/4 cup sugar, divided
- 1 egg white
- 2 tablespoons finely chopped shortbread cookies or graham crackers
Directions:
Preheat oven to broil.
Place the peaches on a baking sheet and sprinkle with 1 tablespoon of sugar.
Broil 4 to 5 inches from broiler until brown on top, 2 to 4 minutes. Set aside.
In a large bowl beat the egg white with a pinch of salt using an electric mixer at medium speed until foamy.
Gradually add the remaining 3 tablespoons sugar. Continue beating until stiff glossy peaks appear.
Fold in cookie crumbles.
Place a dollop on top of each peach half and broil 30 seconds. Turn the broiler off and leave the peaches in the oven just until the tips are browned. 30 seconds to 1 minutes. Make sure to watch them very carefully.
